Instructions
1. Prepare Sorrel
- Wash sorrel leaves, remove thick stems, and cut into large pieces.
2. Sauté Vegetables
- Heat oil in a pot over low heat.
- Add onion, carrot, celery root, and parsnip.
- Sauté gently until soft, about 10 minutes.
3. Add Potatoes and Broth
- Add diced potatoes, chicken or vegetable broth, and 3 cups water.
- Season with salt and pepper.
- Bring to a boil and cook until potatoes are tender, about 20 minutes.
4. Prepare Sour Cream Mixture
- In a bowl, mix sour cream with flour.
- Gradually whisk in 2–3 ladles of hot soup broth, one ladle at a time, mixing well.
5. Combine and Simmer
- Lower heat so soup does not boil.
- Slowly pour tempered sour cream mixture into the soup, stirring constantly.
- Add sorrel leaves and simmer gently for 5 minutes without boiling to avoid curdling.
- Stir in chopped dill.
