  • 300 g lamb meat (back leg), diced small

  • 50 ml dry red wine
  • 1 tsp dried oregano
  • ½ tsp ground coriander

  • 1 heaping tsp ground cinnamon
  • 1 heaping tsp turmeric
  • 2–3 grinds black pepper
  • Salt, to taste
  • Chili to taste (optional)
  • 2 large potatoes, diced to match meat cubes
  • Fresh parsley, chopped
  • 2 tbsp cooking oil
  • Plain yogurt, for serving

Instructions

1. Prepare Lamb Broth

  • Place cracked lamb bones in a pressure cooker and cover with cold water.
  • Add large vegetable pieces, bay leaf, and peppercorns.
  • Cook under pressure for 45 minutes from when the cooker starts to whistle.
  • Strain the broth and refrigerate until needed. (Use 3 cups for the recipe; freeze the rest.)

2. Start the Soup

  • Heat oil in a pot over medium heat.
  • Sauté onion until softened.
  • Add garlic and diced lamb meat; brown the meat lightly.

3. Deglaze and Add Broth

  • Pour in red wine and simmer until evaporated, about 5 minutes.
  • Add 3 cups of lamb broth.
  • Stir in oregano, coriander, cumin, cinnamon, turmeric, pepper, salt, and chili if desired.

4. Simmer

  • Reduce heat to medium-low and simmer for 45 minutes, allowing flavors to meld.

5. Add Potatoes

  • Add diced potatoes and cook until tender, about 20 minutes.

6. Finish and Serve

  • Stir in fresh parsley and remove from heat.
  • Serve hot, accompanied by plain yogurt.
