Ingredients
- 1 baguette
- 2-3 sweet apples (not tart)
- Butter for spreading and sautéing
- Toasted pistachios or coarsely chopped walnuts
Roquefort Cream:
- 30 g butter (82% fat)
- 50 ml heavy cream
- 100 g Roquefort cheese
- 1 sweet apple (not tart)
- 1 tbsp sweet apple cider (or apple brandy, or semi-dry white wine)
Instructions
- Prepare the Roquefort cream ahead to allow it to thicken. Melt butter over low heat in a pan. Peel, core, and finely dice the apple, then sauté gently for about 5 minutes until softened but not browned. Taste to ensure a baked apple flavor.
- Add cider and simmer until it bubbles.
- In a food processor, combine cooled apple mixture, cream, and Roquefort cheese broken into chunks. Blend until smooth and creamy. Transfer to a jar and refrigerate for a few hours until firm and spreadable.
- Slice baguette and spread lightly with butter on both sides. Grill in a hot pan until lightly golden. Let cool completely to prevent melting the cheese cream.
- Core the apples with a corer and cut in half. Slice thinly and sauté in butter in batches until soft and baked-apple flavored (about 3 minutes). Let cool.
- To assemble, spread a moderate layer of Roquefort cream on each baguette slice. Arrange two apple slices in a fan shape on top and sprinkle with toasted nuts.
- Optionally, garnish the platter with fresh arugula and baby spinach leaves. Serve immediately.
