Ingredients

  • Red onions (small size recommended)
  • Oil for frying (neutral oil)
  • Salt, to taste

Instructions

  1. Peel and slice red onions into very thin rings. Spread them out on a work surface lined with a towel or plastic wrap and let dry for 30 minutes to remove excess moisture.
  2. Heat a generous amount of oil in a deep frying pan or wok (preferably with a strainer insert for easy removal) until very hot.
  3. Fry onion rings in batches without overcrowding, for about 1 minute each batch, until golden but not crispy yet. They will crisp up as they cool.
  4. Remove fried onions with a slotted spoon and drain on paper towels. Immediately sprinkle with salt while still hot.
  5. Allow onions to cool completely; they will darken slightly and become crispy.
  6. Use the crispy onions the same day for best texture, as they tend to soften the following day but remain tasty.
