Tips for Choosing and Cleaning Fresh Squid
How to Choose Fresh Squid:
- The skin should have small reddish-purple (vinous) spots, not brown ones.
- The white tube beneath the skin should be shiny, not dull or matte white.
- When you touch the tentacles, they should feel flexible and elastic, not soft or limp.
How to Clean Squid:
- Remove the skin starting from the tail end — it peels off very easily there.
- Pull out the head with the tentacles — it will come out along with a dark intestinal sac that needs to be discarded.
- Clean the inside of the white tube:
- First, pull out the transparent “bone” (a plastic-like quill).
- Then remove all the gelatinous material inside.
- Rinse the tube thoroughly under running water.
- Clean the head:
- Between the tentacles, there is a cartilage with a black dot in the center — pinch it at the base and pull it out like removing a pimple.
- Cut off the eyes with scissors or a knife.
- Your squid are now cleaned and ready to be cooked as you like!
