Choosing the Right Corn

  • Test freshness by gently piercing a kernel with your fingernail. If a milky liquid squirts out, the corn is fresh and tender — perfect for boiling.
  • If the liquid is absent and the kernels appear golden-yellow, the corn is older and firmer. It will need a longer cooking time but is still suitable.
  • Sweet corn for boiling contains more sugar and less starch than field (feed) corn, resulting in a sweeter taste and softer texture.

  • Fresh sweet corn (“in milk”)

Instructions

  1. Prepare the Corn
    Husk the corn, reserving some husks to use later. Remove all silk threads carefully.
    Break the corn into pieces that fit comfortably in your pot—usually halves or thirds. You can also break off the tip if you like.
  2. Layer with Husks
    Line the bottom of the pot with the reserved husks. Arrange the corn pieces on top, then cover with more husks. This enhances flavor and protects the corn during boiling.
  3. Add Water and Weight
    Pour enough water to cover the corn and husks fully. Place a small inverted plate on top of the husks to keep the corn submerged underwater during cooking.
  4. Boil the Corn
    Bring the water to a boil over high heat. Once boiling, reduce heat to medium-low and simmer the corn for about 30 minutes.
  5. Serve
    The corn is best enjoyed immediately, sprinkled with salt to taste.
    Leftover corn can be stored in the cooking water in the refrigerator and reheated later.
