Ingredients
- 400 g green beans, trimmed and cut into 3 pieces
- 200 g ground meat (beef or beef-pork mix, lean)

- 2-3 tbsp cooking oil
Sauce:
- 150 ml water or chicken broth
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp dry sherry
- A few drops toasted sesame oil
- 1 tsp cornstarch (level)
- 1/8 tsp salt
Instructions
- Mix all sauce ingredients in a small bowl until cornstarch dissolves. Set aside.
- Heat oil in a hot wok. Add green beans and stir-fry over high heat, stirring frequently for 8 minutes. Beans should remain crisp-tender. Remove beans and drain on paper towels.
- Remove excess oil from wok, leaving about Β½ tbsp. Quickly stir-fry grated ginger, crushed garlic, and chili until fragrant (a few seconds).
- Add ground meat and cook over high heat, breaking up meat with a spatula. Stir-fry for about 5 minutes until browned.
- Pour in sauce mixture, stir well, and cover wok. Let simmer 2-3 minutes until sauce thickens.
- Uncover, add green beans back into the wok. Toss gently to coat beans with sauce. Adjust seasoning with salt if needed.
- Serve immediately with steamed rice.
