Ingredients

  • 1 whole Camembert cheese (in a wooden box)
  • 1 large garlic clove
  • 1–2 tbsp dry white wine
  • 1 tbsp olive oil
  • Herbes de Provence (or thyme, or rosemary)
  • Freshly ground black pepper

Instructions

  1. Remove the Camembert from its plastic wrapping and place it back into its wooden box.
    Tip: Wrap the bottom of the wooden box with aluminum foil if it has labels that might burn.
  2. Carefully cut a small “lid” on top of the cheese, removing mostly the white rind and as little cheese as possible.
  3. Sprinkle crushed garlic, freshly ground black pepper, and Herbes de Provence into the cut area. Drizzle with olive oil and white wine. Replace the “lid.”
  4. Place the wooden box on a baking tray and bake in a preheated oven at 180°C (350°F) for 20 minutes.
  5. Meanwhile, prepare croutons by drizzling olive oil over 3–4 bread slices and seasoning with salt and pepper. Toast or bake until crisp.
  6. When the cheese is melted and bubbly, carefully remove the top “lid” (watch for steam and hot cheese). Serve immediately by dipping croutons or roasted potato slices into the warm Camembert fondue.

  • Substitute Brie or any soft-ripened cheese if Camembert is unavailable.
  • If you don’t have a wooden box, place the cheese on parchment paper with raised edges to contain melting cheese.
  • Serve with a quality dry white wine for the perfect pairing.
