Ingredients

  • 250 ml fresh lime juice (from 6-7 limes)
  • 6 small fresh cucumbers
  • 1 cup sugar
  • 4 cups cold water
  • 250 ml sparkling mineral water (1 cup)
  • Fresh mint leaves
  • Ice cubes

Instructions

  1. In a saucepan, combine sugar and 1 cup water. Heat until sugar dissolves, then boil for 2 minutes. Let syrup cool.
  2. Pour lime juice into a 1.5-liter pitcher.
  3. Peel cucumbers, cut in half, and scoop out seeds with a teaspoon. Place cucumber halves in a blender with 1 cup water and blend until smooth.
  4. Strain cucumber juice through a fine sieve directly into the pitcher. Press pulp with a spoon to extract as much juice as possible.
  5. Add half of the cooled syrup and 2 cups cold water to the pitcher. Stir well. Taste and add more syrup if desired.
  • I used only half the syrup to keep it pleasantly tart.
  1. Chill the lemonade in the fridge.
  2. When serving, add sparkling mineral water, ice cubes, and garnish with fresh mint leaves.
  • If you won’t drink the entire pitcher at once, add ice cubes only to individual glasses to avoid dilution.
