Ingredients

  • 1 kg potatoes (new potatoes preferred)
  • 2 tbsp olive oil

  1. If using new potatoes, scrub them well with a wire brush. Cut them into halves or quarters depending on size. If not new, peel and cut into cubes.
  2. Boil the potatoes in plenty of salted water over medium heat for about 25 minutes, testing for doneness—you want them cooked through but still firm, not mushy.
  3. Drain the hot potatoes into a large bowl. Sprinkle generously with salt and pepper.
