Why Goat Dairy?

Goat milk, goat cheese (telemea), and fresh goat curd (caș) fill my fridge, thanks to my Salaj roots and access to natural, affordable products often hard to find elsewhere. Beyond its delightful taste, goat milk offers numerous health benefits:

  • Protein in goat milk closely resembles human milk, making it easier to digest.
  • It contains less fat and cholesterol than cow’s milk, making it ideal for weight management diets.
  • Rich in calcium, vitamin B2, potassium, magnesium, and other nutrients, goat milk supports stress relief, better sleep, reduces inflammation, and helps lower blood pressure.

Ingredients

For the Cheese:

  • 4 slices goat cheese (preferably sheep or goat caș) – about 1 finger thick
  • 1 heaping tbsp all-purpose flour
  • 2 eggs
  • Oil for frying

Herb Breadcrumbs:

  • 4 tbsp breadcrumbs
  • 1 tsp herbes de Provence
  • 5-6 dried garlic flakes (or ½ tsp garlic powder)
  • ½ tsp chili powder (optional)
  • ½ tsp salt

Instructions

1. Prepare the Herb Breadcrumbs

  • In a coffee grinder or food processor, blend breadcrumbs with herbes de Provence, dried garlic, chili powder (if using), and salt until well combined.

2. Set up Breading Stations

  • Place flour in one shallow plate.
  • Beat eggs with a pinch of salt in another plate.
  • Pour herb breadcrumbs in a third plate.

3. Bread the Cheese

  • Coat each cheese slice first in flour, shaking off the excess.
  • Dip into the beaten eggs.
  • Coat thoroughly in herb breadcrumbs.
  • Repeat: dip again in egg, then breadcrumbs, pressing the coating firmly with your fingers (including edges) to ensure a compact crust. Shake off excess breadcrumbs.

4. Chill the Coated Cheese

  • Place the breaded cheese slices in the fridge for at least 1 hour to set the crust firmly.

5. Fry the Cheese

  • Heat about half a finger’s depth of oil in a frying pan over medium heat. Test by sprinkling a bit of flour into the oil—if it sizzles, it’s ready.
  • Fry cheese slices for up to 30 seconds per side until golden brown and crisp.
  • Remove with a slotted spatula onto paper towels to drain excess oil.
  • Fry in batches to avoid overcrowding and temperature drop.

6. Serve Immediately

  • Enjoy hot for the best texture—soft, melty cheese inside with a crunchy, flavorful crust.
