DELICATE BUTTER STICKS COOKIE RECIPE
Warning: These cookies are addictive! I placed them next to me at the computer, and before I realized it, I had nibbled through them all. Had to bake another batch so Radu could taste them too.

Ingredients
- 60 g unsalted butter (80% fat, at room temperature)
- 60 g powdered sugar (vanilla-flavored preferred)
- 1 egg white (at room temperature)
- Pinch of salt
- 60 g all-purpose flour
Instructions
- Using a mixer, cream the butter and powdered sugar together for 2 minutes until light and fluffy.
- Add the egg white and mix for another minute.
- If using plain powdered sugar, add a few drops of vanilla extract. Alternatively, add citrus zest (orange or lemon) or other flavored extracts.
- Sift the flour and salt together and gently fold into the butter mixture using a spatula or by hand. Be careful not to overmix. The dough will be very sticky.
- Transfer the dough into a piping bag fitted with a simple 5 mm round tip or cut a 5 mm corner from a plastic bag.
- Pipe dough into sticks about 7 cm long, applying slightly more pressure at the ends to create thicker tips (see reference photo).
- Bake in a preheated oven at 200Β°C (390Β°F) for 5-6 minutes until the cookies are golden brown all around.
- Remove from oven and transfer cookies to a plate. They will be soft and pliable but will harden as they cool. Allow to cool completely before serving.
