Ingredients

For the Salmon:

For the Sour Cream Sauce:

  • 100 g sour/fermented cream (30% fat)
  • 100 ml olive oil
  • 1 heaping tsp mustard
  • 1 small onion
  • 1/2 tbsp sherry vinegar
  • Salt, black pepper

Instructions

  1. Prepare the sauce:
    • Finely dice the onion and sprinkle with salt; let sit for 5 minutes.
    • Add vinegar and let it sit for another 10 minutes.
    • Meanwhile, blend the sour cream, olive oil, and mustard until smooth. Season with freshly ground black pepper and a pinch of salt, blend briefly again.
    • Pour the sauce over the onions and stir.
    • Note: This will yield more sauce than needed; extra works great as salad dressing.
  2. Cook the salmon:
    • Place salmon in a small non-stick, ovenproof dish. Sprinkle with salt and drizzle with olive oil.
    • Bake at 200°C for 20 minutes for medium, tender doneness.
  3. Prepare the potatoes:
    • Peel and quarter the potatoes. Boil in salted water until a fork pierces easily. Drain well.
    • Heat a little oil in a pan. Add potatoes and season with salt, black pepper, chili flakes (¼ tsp, optional for mild heat), and ½ tsp dried oregano sprinkled on top.
    • Sauté over medium heat, stirring occasionally, until potatoes get some golden browning on all sides.
  4. Combine and serve:
    • Break the cooked salmon into large pieces (skin removed) and gently mix with the potatoes.
    • Toss arugula with 1 tablespoon of the sour cream sauce.
    • To serve, spread a thin layer of the sour cream sauce on a wide serving plate. Arrange the potato and salmon mix on top, then scatter the dressed arugula over everything.
    • Serve immediately, with extra sauce on the side if desired.
