  • 1 cup long-grain rice (basmati recommended)
  • 1 1/4 cups water

  • 250 g champignon mushrooms
  • 2 spring onions (green and white parts), sliced
  • 1 leek (white and light green parts), halved lengthwise and thinly sliced
  • 1/2 cup peas (fresh or frozen)
  • 2 tbsp sesame seeds
  • 3 tbsp oil
  • Salt and freshly ground black pepper to taste

  1. Heat 1 tbsp oil in a pot over high heat. Add rice and toast, stirring frequently, until it develops a light, uneven golden color (about 3-5 minutes).
  2. Add warm water to rice, bring to a boil, cover, and simmer for 5 minutes.
  3. Turn off heat, remove lid, place a clean towel over the pot, then replace the lid. Let rice rest for 15 minutes without lifting the lid.
  4. Meanwhile, slice spring onions and leek as described. Clean mushrooms, remove stems, and slice thinly.
  5. In a large skillet, heat 2 tbsp oil and sauté mushrooms with a pinch of salt and pepper until softened. Remove mushrooms to a plate.
  6. In the same skillet, sauté spring onions and leek for about 2 minutes until slightly softened. Add to mushrooms.
  7. Boil peas in salted water, drain, and combine with the mushroom mixture.
  8. Toast sesame seeds gently in a dry pan until fragrant and lightly golden.
  9. Fluff the cooked rice with a fork, drizzle with sesame oil and soy sauce, and mix well.
  10. Add sautéed vegetables and toasted sesame seeds to the rice; toss gently and adjust salt to taste.
  11. Serve warm or cold as a tasty vegan side or salad.
