  • 2 champignon mushrooms, thinly sliced
  • 1 tbsp grated cheese (I used goat cheese from Five Continents)
  • 1 tbsp oil
  • Fresh parsley, chopped (for garnish)
  • Salt and freshly ground black pepper

👩‍🍳 Instructions

  1. Clean mushrooms by removing stems and wiping caps with a damp cloth. Slice very thinly.
  2. Grate cheese and set aside in a covered container.
  3. Beat eggs with water, salt, and pepper until well combined.
  4. Heat oil in a small non-stick pan (~16 cm diameter).
  5. Add mushroom slices and sauté briefly for about 30 seconds until soft.
  6. Lightly re-beat eggs and pour over mushrooms. Immediately use a spoon to pull mushrooms toward the center, as they tend to slide to the edges.
  7. As edges begin to set, gently pull them toward the center to let uncooked egg flow to the edges. Repeat around the pan until most egg is set. Tilt the pan if needed to help flow.
  8. When just a small amount of uncooked egg remains on top, sprinkle grated cheese evenly over the omelette.
  9. For a more cooked, browned top, cover pan and cook for 30 seconds.
  10. Carefully fold the omelette in half by maneuvering the pan and slide onto a plate.
  11. Garnish with chopped parsley and serve immediately.
