  1. Cut off both ends of the peppers—the stem (top) and the tip (bottom).
  2. Slice the pepper lengthwise on one side from top to bottom.
  3. Open the pepper along the cut and flatten it out. Sometimes it may crack on the opposite side, which is okay.
  4. Remove all the seeds, core, and inner ribs carefully.
  5. Place the pepper with the shiny outer skin facing down on the cutting board.
  6. Slice lengthwise into strips of your preferred thickness. For thin strips (julienne), cut narrow slices; for wider strips, cut thicker.
