Ingredients

For Quick Pickled Red Cabbage:
- 300 g red cabbage, finely shredded
- 3 tbsp rice vinegar
- 1 tbsp sugar
- Β½ tbsp fish sauce
- 2 tbsp water
- Salt, to taste
To Serve:
- Fried eggs (preferably with runny yolks)
- 3 green onions, sliced
- Toasted sesame seeds
Instructions
1. Prepare the Quick Pickled Red Cabbage
- Toss shredded cabbage with a generous pinch of salt, massaging until slightly softened and moist.
- In a small bowl, dissolve sugar in water, add rice vinegar and fish sauce. Pour over cabbage and mix well.
- Pack cabbage tightly in a jar or container, seal and refrigerate for at least 3 hours or overnight for best color and flavor. Shake occasionally.
2. Marinate the Pork
- Thinly slice the pork neck perpendicular to the grain.
- Mix all marinade ingredients in a bowl until combined. Add pork slices and massage marinade evenly over them.
