Ingredients

  • 4 small zucchinis (choose the smallest for tender skin and minimal seeds)
  • 2 sprigs fresh mint, chopped

  • Freshly ground black pepper
  • Olive oil for brushing

Instructions

  1. Wash zucchinis and dry them. Trim the ends.
  2. Stand zucchinis upright and slice lengthwise into approximately 0.5 cm thick slices. Alternatively, use a slicer set to maximum thickness to get 4-5 slices per zucchini.
  3. Brush both sides of the zucchini slices with oil.
  4. Preheat a grill pan (no oil needed) over high heat for 5 minutes.
  5. Grill zucchini slices for about 2.5 minutes on the first side, then 1.5 minutes on the other, until grill marks form.
  6. Arrange grilled slices side by side on a large plate. Season with coarse salt and freshly ground black pepper.
  7. Generously grate sheep cheese over the hot zucchini slices—the cheese will melt slightly.
  8. Sprinkle chopped fresh mint leaves on top.
  9. Cover the plate with foil to keep warm while grilling the next batch.
  10. Repeat layering zucchini slices, seasoning, cheese, and mint until all slices are grilled.
  11. Reserve any remaining grated cheese in a bowl for serving alongside.
  12. Serve warm with extra grated cheese on the side.
