π Prep & Cook Time: 15 minutes
π½οΈ Servings: 2
π₯ Ingredients
For the eggs and tomatoes:
- 4 eggs
- 1 medium tomato
- 1 tbsp olive oil
- Salt and freshly ground black pepper
For the basil sauce:
- 2 large basil leaves
- A pinch of dried oregano
- 4 tbsp extra virgin olive oil
- A pinch of coarse sea salt
π©βπ³ Instructions
- Prepare the basil sauce:
- Place basil leaves and sea salt in a mortar and lightly crush to bruise the basil.
- Add 2 tablespoons of olive oil and continue to crush until the basil is finely chopped.
- Stir in the remaining olive oil and oregano. Set aside.
- Grill the tomatoes:
- Slice the tomato into thick rounds (3-4 slices for a medium tomato, after trimming a thin slice from the stem end; smaller tomatoes can be halved).
- Brush the tomato slices with olive oil.
- Heat a grill pan on high (no oil needed) for about 5 minutes.
- Grill the tomato slices for about 2 minutes per side until softened but still holding shape. Use a spatula to carefully turn and remove them. Transfer to a plate.
- Cook the marbled eggs:
- Heat a small non-stick skillet (~16 cm) over medium heat and add 1/2 to 1 tablespoon of oil.
- Crack two eggs into the pan at once. Using a spoon, gently break the yolks and swirl them lightly with the surrounding whites to create a marbled effect. Season with salt and pepper.
- Once the egg whites turn opaque, carefully flip each egg piece with a spatula (donβt worry if they break). Cook for just a few seconds on the other side.
- Transfer the marbled eggs directly to serving plates.
- Serve:
- Arrange two grilled tomato slices alongside the eggs.
- Drizzle the basil sauce over the tomatoes and eggs for a fresh, aromatic finish.
π‘ Tips
- Use a good quality non-stick pan for easy flipping with minimal oil.
- Adjust the basil sauce to taste by adding more oregano or salt as desired.
- Serve immediately with crusty bread for a complete breakfast.
