Ingredients
- 250 g champignon mushrooms
- 1 onion
- ½ red bell pepper
- 1–2 garlic cloves
- 100 g soft cheese that melts easily (such as mozzarella or mild cheddar)
- 4 tbsp olive oil
- ¼ tsp oregano (or thyme)
- Salt and pepper, to taste
Instructions
1. Sauté the Vegetables and Mushrooms
- Heat olive oil in a pan and sauté chopped onion and bell pepper (not too finely) until soft.
- Increase heat to high and add mushrooms sliced thickly.
- Cook, stirring frequently, until mushrooms are tender and cooked through (about 5 minutes).
- Remove from heat and stir in crushed garlic, oregano, salt, and pepper.
2. Prepare for Baking
- Cut the cheese into cubes, reserving one slice large enough to cover the baking dish.
- Mix the cheese cubes into the mushroom mixture.
- Transfer everything to a small oven-safe dish.
- Top with the reserved cheese slice and sprinkle a little oregano over it.
Note: I used orange cheddar which doesn’t melt as easily and resulted in a slightly rubbery texture. For best results, use a soft melting cheese like mozzarella.
3. Bake and Serve
- Place under the grill (broiler) in a preheated oven until the cheese browns and bubbles, about 10 minutes.
