Rustic Skillet with New Potatoes and Bacon

Ingredients
- 700 g new potatoes (or regular potatoes cut into 6 lengthwise)
- 150 g bacon, sliced
- 3 onions
- A bit of fat (goose, duck, or pork fat; optional)
- Salt, pepper, paprika
Instructions
- Choose small new potatoes. Cut larger ones in halves or quarters; leave the small ones whole. For regular potatoes, slice lengthwise into 6 pieces.
- Boil potatoes in salted water: about 10 minutes for new potatoes, 15-20 minutes for regular ones. They should be almost cooked but not falling apart. Drain well.
- In a skillet, cook bacon slices on low heat without added fat. When enough fat renders, increase heat and fry until crispy. Remove bacon from skillet.
- In the remaining bacon fat, cook sliced onions over medium-low heat until browned and caramelized. Remove onions and add them to the bacon.
- If little fat remains, add about 1 heaping teaspoon of your preferred fat (goose fat is excellent). Add the drained potatoes to the skillet. Season generously with salt and pepper. Fry until golden and crispy on all sides, stirring occasionally.
- Once potatoes are golden and crisp, add bacon and onions back into the skillet. Sprinkle 2 good pinches of paprika and mix well. Taste and adjust seasoning. Serve immediately.
