- 3 tbsp fresh lemon juice
- 2 tbsp olive oil

- Bring a pot of salted water to boil. Cook peas according to package instructions until tender. Using a slotted spoon, transfer peas to a mixing bowl.
- In the same pot, cook the rice according to package instructions. Drain well and add to the bowl with peas.
- Drizzle 1 tbsp olive oil over the macerated herbs and stir gently.
- Flake the salmon into bite-sized pieces, squeeze remaining 1 tbsp lemon juice over it, and add to the bowl.
