🥄 Ingredients

  • 50 g long-grain rice
  • 150 g salmon fillet (or thinner edges from a large fillet)
  • 200 g frozen peas
  • 2 sprigs dill
  • 2 sprigs parsley
  • 2 young green onions (spring onions)
  • Zest of 1/4 organic lemon
  • 3 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper

👩‍🍳 Instructions

  1. Preheat oven to 200°C (390°F). Season salmon with salt and pepper, rub with 1 tbsp olive oil. Bake for 20 minutes if using a regular fillet; if using thinner edge pieces, bake for 10–15 minutes until just cooked.
  2. Finely chop dill, parsley, and green onions. Sprinkle with a pinch of salt, lemon zest, and 2 tbsp lemon juice. Let herbs macerate while preparing other ingredients.
  3. Bring a pot of salted water to boil. Cook peas according to package instructions until tender. Using a slotted spoon, transfer peas to a mixing bowl.
  4. In the same pot, cook the rice according to package instructions. Drain well and add to the bowl with peas.
  5. Drizzle 1 tbsp olive oil over the macerated herbs and stir gently.
  6. Flake the salmon into bite-sized pieces, squeeze remaining 1 tbsp lemon juice over it, and add to the bowl.
  7. Combine all ingredients gently, season with salt to taste. Serve warm or at room temperature.
