Today I prepared half of the confit gizzards made yesterday, and the result was delicious—all homemade. The quick dumplings, last autumn’s pepper paste, hearty gizzards packed with vitamins (selenium, B12, iron) and protein, and even rosemary fresh from my own frozen potted plant. Another moment to appreciate such a practical and rewarding hobby!

Ingredients
- Half portion of flour dumplings (from 100 g flour)
- Half portion of confit gizzards
- ½ tsp hot chili powder in oil or hot pepper paste (or ¼ tsp sweet paprika and chili flakes to taste)
- 1 sprig rosemary, torn into 2-3 pieces
- Salt and freshly ground black pepper to taste
Instructions
- In a large skillet, add the drained confit gizzards along with 2 tablespoons of their rendered fat.
- Sprinkle with freshly ground black pepper, add the spicy pepper paste and the torn rosemary.
- Sauté the gizzards until heated through and optionally allow them to brown lightly, stirring occasionally.
- Add the quick dumplings and mix well with the contents of the skillet.
- Let everything fry over medium heat until the dumplings develop light golden spots. Stir occasionally but not too often, so they brown better.
- Taste and adjust salt as needed.
- Serve hot.
