- 4 ripe tomatoes
- 5 tbsp oil
- ½ cup rice
- Salt and pepper, to taste
Instructions

- Score tomatoes with an X at one end, blanch in boiling water for 1 minute, then peel and dice.
- Add diced tomatoes to the sautéed vegetables and simmer for about 8 minutes, seasoning with salt and pepper.
Taste the sauce while cooking—if it tastes too acidic, add 1 tsp sugar, especially when using greenhouse or less ripe tomatoes. - Cook rice separately in plenty of salted water according to package instructions. Drain well.
- Mix the cooked rice into the vegetable stew just before serving and adjust salt to taste.
If not eating immediately, keep rice and stew separate to prevent the rice from absorbing all the sauce and losing texture.
💡 Tips

- Adjust acidity with sugar for balanced flavor.
- Cooking rice separately keeps it fluffy and prevents sogginess.
