A wonderful pork neck roast, slow-cooked to tender perfection with a vibrant spicy-orange marinade. Juicy, flavorful, and versatile—delicious hot or cold.

Ingredients

  • 1.7–2 kg whole pork neck
  • ½ small onion (~30 g)
  • Juice of 1 orange (~50 ml)
  • Zest of ¼ organic orange
  • 1 tsp ground cumin
  • ¼ tsp smoked paprika
  • 1 tbsp nduja (about 30 g) — or substitute with ¼ tsp sweet paprika + 2 tbsp olive oil
  • 1 tbsp rice vinegar
  • Salt and freshly ground black pepper

Instructions

  1. Pat pork neck dry with paper towels. Optionally, tie with kitchen twine to maintain a round shape during roasting. Season generously with salt and freshly ground black pepper.
  2. In a mini food processor or with an immersion blender, blend onion, orange juice and zest, cumin, smoked paprika, nduja (or paprika and olive oil substitute), rice vinegar until smooth.
  3. Rub the pork thoroughly with this marinade paste. Let rest at room temperature for 30 to 60 minutes. Season with more freshly ground black pepper on top.
  4. Preheat oven to 170°C (340°F). Place pork in a Dutch oven with a lid. If no Dutch oven, wrap tightly in foil and place in an oven-safe roasting pan.
  5. Roast covered for 2 hours. Use a meat thermometer to check internal temperature, aiming for 85–90°C (185–194°F); I removed mine at 86°C.
  6. Remove from oven and let the pork rest, covered, for 20–30 minutes before slicing.
  7. Serve warm with oven-baked potato wedges and fresh salad, or enjoy cold the next day with pickles or in sandwiches with hummus.
