SLOW-ROASTED PORK NECK WITH SPICY ORANGE MARINADE
A wonderful pork neck roast, slow-cooked to tender perfection with a vibrant spicy-orange marinade. Juicy, flavorful, and versatile—delicious hot or cold.
🕒 Prep Time: 15 min (+ 30-60 min resting)
🍳 Cook Time: 2 hours
🍰 Servings: 6-8
Ingredients
- 1.7–2 kg whole pork neck
- ½ small onion (~30 g)
- Juice of 1 orange (~50 ml)
- Zest of ¼ organic orange
- 1 tsp ground cumin
- ¼ tsp smoked paprika
- 1 tbsp nduja (about 30 g) — or substitute with ¼ tsp sweet paprika + 2 tbsp olive oil
- 1 tbsp rice vinegar
- Salt and freshly ground black pepper
Instructions
- Pat pork neck dry with paper towels. Optionally, tie with kitchen twine to maintain a round shape during roasting. Season generously with salt and freshly ground black pepper.
- In a mini food processor or with an immersion blender, blend onion, orange juice and zest, cumin, smoked paprika, nduja (or paprika and olive oil substitute), rice vinegar until smooth.
- Rub the pork thoroughly with this marinade paste. Let rest at room temperature for 30 to 60 minutes. Season with more freshly ground black pepper on top.
- Preheat oven to 170°C (340°F). Place pork in a Dutch oven with a lid. If no Dutch oven, wrap tightly in foil and place in an oven-safe roasting pan.
- Roast covered for 2 hours. Use a meat thermometer to check internal temperature, aiming for 85–90°C (185–194°F); I removed mine at 86°C.
- Remove from oven and let the pork rest, covered, for 20–30 minutes before slicing.
- Serve warm with oven-baked potato wedges and fresh salad, or enjoy cold the next day with pickles or in sandwiches with hummus.
💡 Tips
- Tying the meat helps retain a neat shape and even cooking.
- Nduja adds smoky, spicy richness—substitute as needed.
- Resting the meat ensures juicy, tender slices.
- Perfect for meal prep—works well hot or cold.
