SPICY HARISSA CHICKEN SKEWERS — AROMATIC & FLAVORFUL MARINADE

These chicken skewers are lightly spicy from harissa and bursting with aromatic herbs and spices. The same marinade works great for pork or lamb skewers too.

Ingredients

  • 2 chicken breasts (or boneless thighs)
  • 80 ml olive oil
  • Juice of 1 lemon
  • 1 sprig fresh rosemary
  • 1 tbsp heaping harissa paste
  • 1 tsp salt
  • ½ tsp turmeric
  • ½ tsp black pepper

Instructions

  1. Cut chicken into cubes or strips slightly thicker than a finger.
  2. Place chicken in a bowl. In a separate cup, mix olive oil, lemon juice, rosemary (whole sprig or chopped for stronger flavor), harissa, salt, turmeric, and pepper. Pour marinade over chicken and mix well to coat evenly. Refrigerate for at least 3 hours.
  3. Thread chicken pieces onto skewers as shown in photos. Do not discard marinade.
  4. Preheat grill (electric or charcoal) until very hot.
  5. Place skewers on the grill and cook for 10 minutes. Brush with reserved marinade, then turn and brush the other side.
  6. Grill another 10 minutes, turning and brushing marinade regularly. For even cooking, turn skewers on all sides, grilling about 2 minutes per side on each lateral face.
  7. Serve immediately with extra harissa for added heat and a fresh salad on the side.

  • Chop rosemary into the marinade if you prefer a more intense herbal flavor; otherwise use whole sprig for subtle aroma.
