- 8 fragrant strawberries, hulled and quartered
- Granola with seeds and honey, for sprinkling
For the Roasted Strawberry Sauce:
- 250 g strawberries, hulled and halved or quartered (small ones can be left whole)
- 15 g powdered sugar (optional)
Instructions
- Make the Roasted Strawberry Sauce:
Preheat oven to 200Β°C (390Β°F).
Place strawberries in an oven-safe dish and roast for 25 minutes until soft and syrupy.
Transfer roasted strawberries to a blender and puree until smooth.
Taste and add powdered sugar if needed, then blend briefly again to make a light, frothy sauce. Let cool.
Make extra sauce and store in fridge for up to 3-4 days. - Assemble the Parfaits:
Divide half of the strawberry sauce evenly between two glasses or dessert cups.
Spoon 1/3 of a yogurt into each glass on top of the sauce.
Sprinkle a generous layer of granola over the yogurt.
Add fresh strawberry slices (about 4 per serving).
Top with the remaining yogurt.
Finish with a sprinkle of granola.
