🕒 Prep Time: 15 min

🍳 Cook Time: 1 hour
🍽️ Yields: 2 servings

Ingredients

For the Stuffed Potatoes:

  • 4 medium potatoes
  • 100 g Focsani cream cheese (or burduf cheese, or telemea cheese)
  • 1/2 small onion
  • 1 small egg
  • 1/4 tsp sweet paprika
  • Salt and black pepper to taste
  • 1 tbsp oil

For the Creamy Dill Sauce:

  • 100 ml sour cream
  • 4 sprigs fresh dill, finely chopped
  • Pinch of chili powder
  • Pinch of sweet paprika
  • Salt to taste

Instructions

1. Prepare the Creamy Dill Sauce

  • In a bowl, combine sour cream, chopped dill, chili powder, and paprika. Add a pinch of salt and mix well. Set aside to let the flavors meld.

2. Bake the Potatoes

  • Scrub the potatoes well using a steel wool pad or a rough brush.
  • Prick the potatoes all over with a fork to allow steam to escape.
  • Bake at 200°C (390°F) for 45-60 minutes, until a fork slides easily into the potatoes (cooking time varies depending on size).
  • Remove from oven and let cool slightly. Slice each potato lengthwise in half.
  • Scoop out the potato flesh, leaving a thin layer inside the skin to maintain the shell’s shape.

3. Prepare the Filling

  • Finely chop the onion and sauté it in 1 tablespoon oil until soft. Remove from heat and season with pepper and paprika.
  • In a bowl, mix the scooped-out potato flesh with the sautéed onion, beaten egg (if you don’t have a small egg, beat a regular egg and use half), and cheese. Season with salt to taste. Mix until well combined.

4. Stuff and Bake

  • Fill the hollowed potato skins evenly with the prepared mixture.
  • Arrange stuffed potatoes in a baking dish and bake at 200°C (390°F) for 10 minutes.
  • Switch the oven to grill (broil) mode and continue cooking for an additional 10 minutes, or until the tops are golden brown and crispy.

5. Serve

  • Serve the stuffed potatoes hot, drizzled generously with the creamy dill sauce. Accompany with a fresh green salad for a complete meal.
