  3. Remove from oven, add sliced green onions, and gently mix.
    Sweet potatoes can be prepared 1-2 days ahead and refrigerated.
  4. To make the omelette, heat oil in a 26 cm skillet. Spread 1/3 of the baked sweet potatoes with green onions evenly on the bottom. Warm gently on low heat.
  5. Beat 6 eggs with salt and pepper until combined. When oil sizzles, pour eggs into skillet over potatoes.
  6. Cook a few seconds until edges begin to set, then transfer skillet to a 190°C (375°F) oven. Bake for 10-13 minutes until omelette is set and firm on top.
  7. Carefully slide omelette onto a large plate. Top with soft cheese pieces, some green onion from the potatoes, freshly ground black pepper, chili flakes (optional), and drizzle 2 tsp olive oil. Serve warm or at room temperature.
