Ingredients

Main:

  • 1 pork tenderloin (~500 g)
  • 3 large sweet potatoes
  • 2 green onions
  • A drizzle of oil
  • Salt, freshly ground black pepper

Ginger-Onion Vinaigrette:

  • 1 medium white onion
  • 10 g ginger (peeled)
  • 1 tbsp sherry vinegar (or rice vinegar as substitute)
  • Β½ tbsp low-sodium soy sauce
  • 4 tbsp olive oil
  • Salt

Instructions

  1. Roast the sweet potatoes:
    Peel and cut the sweet potatoes into cubes. Place in an ovenproof dish, sprinkle lightly with salt and drizzle a little oil. Toss well to coat. Roast in a preheated oven at 200Β°C (390Β°F) for 30–40 minutes, stirring once during cooking.
  2. Prepare the vinaigrette:
    Finely dice the white onion. Sprinkle with salt and let sit for 10 minutes. Squeeze out the excess liquid (using your hands or a cloth). Return to the bowl. Grate the ginger finely and mix into the onion. Add vinegar and let macerate for 10–15 minutes. Stir in soy sauce, then olive oil. Set aside to meld flavors.
  3. Prepare the pork:
    Slice the tenderloin thinly (~1–1.5 cm thick, about 15 slices). Using a meat mallet (or inside a plastic bag), gently pound slices to flatten. Sprinkle lightly with salt, drizzle some oil, and massage evenly.
  4. Cook the pork:
    Heat a large non-stick or cast-iron pan. Add pork slices without overcrowding. Cook 45 seconds on the first side, then 15 seconds on the other β€” the pork should be lightly browned but still juicy. Remove slices to a dish and season with freshly ground black pepper.
  5. Finish the dish:
    Chop green onions and add them to the sweet potatoes. Pour 2 tablespoons of the vinaigrette juice over and gently toss to combine. Adjust salt to taste.
    Let the cooked pork rest 2–3 minutes, then toss with the remaining vinaigrette. This intensifies the flavor, but you can serve immediately as well.

    Arrange sweet potatoes on a platter. Place pork slices alongside, drizzled with a little vinaigrette and scattered green onions.
