This cream is light (made with whole eggs), tangy, aromatic, and definitely irresistible. It’s perfect on cookies, pancakes, in cake or cheesecake fillings, mixed into yogurt with granola or fruit, or blended with mascarpone. It’s quick to prepare, naturally gluten-free, and this summer’s trendy cream!

Ingredients

  • 2 small eggs
  • 75 ml fresh lime juice (from about 3 juicy limes)
  • Zest of 1 lime, finely grated
  • 75 g sugar
  • Pinch of salt
  • 35 g unsalted butter (82% fat), cubed

Instructions

  1. In a stainless steel or silicone whisk and saucepan (avoid non-stainless metals to prevent metallic taste), whisk eggs thoroughly like for an omelet.
  2. Add sugar, lime juice, lime zest, and salt. Whisk well to combine.
  • Use a heavy-bottomed saucepan for even, gentle heating and to reduce the risk of curdling.
  1. Place the saucepan over medium-low heat and whisk continuously, scraping all over the pan. After about 2–2.5 minutes (less time in thinner pans), the cream will start to thicken slightly.
  2. Reduce heat to low and continue whisking until the cream thickens to a yogurt-like consistency (about 1 more minute, or 82-83°C if using a thermometer).
  3. Remove from heat and vigorously whisk in the butter cubes until fully melted and incorporated.
  4. Pour the cream into a jar and let cool. For a smoother texture without lime zest bits, strain through a fine sieve.
  5. Store refrigerated for up to 1 week.
